12 fresh figs, cut in half
24 slices of pancetta, long and thinly sliced
1 tablespoon fresh chopped thyme
¼ cup extra virgin olive oil
Preheat oven to 400°F.
Lay the figs cut side up on cutting board and sprinkle with fresh thyme. Wrap each half with pancetta and place on a baking sheet. Drizzle with extra virgin olive oil and place into the oven for 10 to 12 minutes or until the pancetta is cooked and a little crisp.
